His restaurant and décor
Frédérik's restaurant Les Trois Soleils de Montal is in Saint Jean-Lespinasse in the Lot département, right at the heart of an area crammed with sightseeing appeal. The Renaissance Château de Montal, medieval town of Saint Céré, charming villages of Autoire and Loubressac and Château de Castelnau are all just a stone's throw away, and the Gouffre de Padirac swallow hole and the Dordogne Valley are very close by too. All great ways to build up an appetite before enjoying the fruits of this chef's talents.
His approach to cooking
Forty-eight-year-old Frédérik believes that what a chef does for a living is perhaps one of the last skilled professions in which each creation is clearly stamped with the creator's individual sensitivities.
What inspires him
His passion for beautiful things (including the fine produce he works with every day) and his permanent curiosity.
The chef's suggestions
His corn-fed squab with young vegetables and mild garlic jus; and also his veal sweetbreads in potato with morels.
His favourite wines
Cahors Clos de Gamot (particularly the 2002 cuvée) and Madiran Domaine de Berthoumieu (particularly the Charles de Batz 2006 cuvée), and also the Gaillac AOC wines of Bernard Plageoles and Cahors AOC wines produced by Mathieu Cosse.
His take on Midi-Pyrénées
In Frédérik's opinion, the gastronomy of Midi-Pyrénées is part of an existing and recognised culinary heritage, a self-perpetuating culture that begins with the produce it draws on, in which the chef serves only as the agent that reveals the potential of that produce.
What his Michelin star means to him
Frédérik is self-taught, and became a chef really by accident when he stood in at the last minute for a chef who had gone on to pastures new. His encounter with Alain Dutournier made a big impression on Frédérik, who obtained his Michelin star in 1999. For him, it is about gaining recognition and has nothing to do with knowing the right people, and it serves as an additional motivating factor that encourages him on to greater things.
