Jean-Luc grew up on a farm in northern Aveyron where he acquired a taste for good produce and fine traditional and rural cuisine.
Certainly not a typical one! After studying literature and sociology and spending lots of time in art studios, Jean-Luc came to realise that cooking can be a means of expression. At the age of 27 he took a 6-month adult education course to train to be a chef.
His approach to cooking
According to Jean-Luc, cooking is about sharing the pleasure of both the doing and the eating. It achieves its goal when it appeals to the body through the flavours it provides but also to the mind through its heritage, knowledge and culture.
In an old building in the centre of Rodez, Jean-Luc's restaurant is all contrasts, with a contemporary façade and modern décor featuring bright lines and a subdued atmosphere. A series of culinary paintings on the wall are an expression of the dialogue between art and cooking that intensifies the dining experience.
His great love
Think of some of his dishes as paintings, in some cases tributes to great contemporary artists such as Pierre Soulages, who was born in Rodez. Take a look at his pan-fried squid in the style of Pierre Soulages, in ink, with basil and anise and a violet froth, red pepper and black rice. A fusion of art and food!
He finds inspiration at the market, walking in the countryside, travelling and when enjoying the blend of art and organised reverie that gives him so much pleasure.
The chef's suggestions
His Laguiole 'sharp' razor-shell gratin, his carpaccio of gambas with elderflower oil; and also his Mont-Royal pigeon with fig and grape.
His favourite Midi-Pyrénées wines
Marcillac AOC, an Aveyron wine, because of its uniquely local character obtained from the Mansois grape variety and also because it comes from Jean-Luc's own vineyard just outside Rodez.
His Michelin star
Awarded in recognition of his approach, his ethical stance and his professionalism. Jean-Luc also considers it to be a recognition of the region's own talents, the quality of its local produce and its vibrant and high-achieving social fabric.
